Pastrami Wrapped Chicken in White Mushroom Sauce

The white sauce made with almond milk is lighter than with milk or cream and is mouthwatering with the mushrooms spooned on top. This dinner is so easy to put together. Chicken Wrapped Pastrami with White Mushroom Sauce

Serves 6
6 ounces pastrami, sliced
6 boneless chicken breasts, pounded flat
2 tablespoons margarine
¼ cup flour
1 cup almond milk
8 ounces mushrooms
Parsely sprigs for garnish, optional

Preheat oven to 350F.

In an 8x12" glass or ceramic oven proof dish, wrap each piece of chicken with 1 piece of pastrami. Place side with edges of pastrami on the bottom to hold while baking.

White sauce: Melt margarine into a saucepan. Add flour, stirring until the margarine and flour are combined. Add almond milk and stir until the mixture is smooth. Add the mushrooms and stir gently to combine.

Pour white sauce over chicken to cover. Cover with parchment paper and then with aluminum foil.

Bake for 50 minutes. Remove foil and bake for another 10 minutes.

When serving, spoon the white sauce and mushrooms over each piece. Garnish wtih parsley, if desired. Serve with a side salad, such as the one suggested above.
