A new subscriber suggested that I include a full meal menu with all my recipes, as she doesn't want to come up with a whole meal on her own! What a great idea. Beef Hoisin Stir Fry

Beef Hoisin Stir Fry

 

Serves 4 

8 ounces steak cut into strips
1 cup brown rice (makes 2 cups cooked)
1 cup broccoli crowns, cut
1/2 red pepper, diced

1/2 green peppers, diced
1 medium onion, diced
1 tablespoon Worcestershire Sauce

1 tablespoon hoisin sauce
 2 eggs, scrambled
¼ cup soy sauce
½ teaspoon Kosher salt
1 teaspoon ground black pepper
1 teaspoon onion powder
4 garlic cloves, minced
5 tablespoons vegetable oil, divided
Cooking Spray



1. Turn on stove to medium heat. Add 2 tablespoons olive oil to a large skillet. When oil is hot, add broccoli and sauté until broccoli browns on one side, about 2 minutes. Toss in onions and peppers and sauté for 2-4 more minutes. Remove vegetables from skillet and set aside.
2. Add 1 tablespoon olive oil to skillet and add steak. Sprinkle with salt. Sear on one until it develops a crust about 2 minutes. Add Worcestershire Sauce and Hoisin Sauce and sauté the steak until it’s done. Remove from skillet and set aside.
3. Wash and dry skillet. Spray with cooking spray. Let the skillet heat a minute and add eggs. Scramble and remove from skillet and set aside.
4. Add 2 tablespoon olive oil to the skillet, heat and add rice. Sauté rice for 3-5 minutes. Add sodium soy sauce. Sauté rice for another 3-5 minutes, letting the soy sauce coat the rice. 
5. Add steak, peppers, onions, eggs, pepper, garlic cloves and onion powder. 
6. Stir together and adjust seasoning. 

 

Expandthetable suggestions

 

Rice Noodles: Substitute rice noodles, cooking according to package directions.

Meat free: Use tofu or seitan in place of beef.

Add other veggies: Try zucchini, mushrooms, green onions, snow peas, edamame, bok choy, fresh spinach, sweet potato, cabbage or celery. Slice thinly.

The Inquisition kept careful records of its arrests, tortures and auto da fé’s, burning at the stake of the Catholic Church's heretics. In their records over hundreds of years, across many countries, the story of Diego Lopes was unique. The Church and witnesses recorded that Diego, brought to the stake in Coimbe, Portugal, simply disappeared. The Church attributed Diego’s vanishing to the Devil. Thousands of witnesses declared it a miracle, the Jews among them. God had rescued His own.

Martin Elsant was intrigued. He wrote his historical novel, Acts of Faith, to create his own theory. Like Houdini, aka Erik Weisz, in Martin’s view, Diego was a very successful escape artist. Now I was intrigued.

Hot and Sour Soup is one of my favorites and a perfect mate for Beef Hoisin Stir Fry. A sweet, light dessert is called for and fruit salad, fruit of your choice, is a great way to end the meal.
