Potato Kugel à la Mimi Fine


6 medium potatoes, unpeeled, coarsely grated, rinsed and well drained

1 large onion, grated

¾ cup vegetable oil

¾ cup matzah meal

1  tablespoon salt

1 teaspoon pepper

1 teaspoon garlic powder or 3 garlic cloves, minced


  1. Spray 9 X 13 baking dish.

  2. Mix potatoes with onion, oil, matzah meal and seasonings.

  3. Bake at 350 for 1½ to 2 hours, until top is golden brown.



Allium Free:  Omit onion and garlic. Substitute 4 radishes, grated.



Three Vegetable Kugel


2 medium potatoes, unpeeled, grated, rinsed and well drained

2 large zucchinis, unpeeled, grated and drained

3 large carrots, unpeeled and grated

1 large onion, grated

2 garlic cloves, minced

4 large eggs, beaten

¾  cup matzah meal

¾ cup oil

1  tablespoon salt

1 teaspoon pepper

½ cup fresh parsley, chopped


  1. Spray a 9X13 baking dish.

  2. Mix all ingredients and pour into pan.  Pat to create an even thickness.

  3. Bake at 350 for 1½ hours or until crisp on top.



Allium Free:  Omit onion and garlic.  Substitute 4 radishes, grated.
