Easy Cheesy Cauliflower


Make it vegan:  Use a vegan cheese.

1 head cauliflower

2 tablespoons olive oil mayonnaise

Cheddar or Swiss Cheese, sliced or grated to cover cauliflower, approximately 4-5 slices or 1/2 cup grated.

Salt and pepper to taste.

  1. Wash and remove outer leaves. Partially remove the end of the core, keeping the cauliflower whole and together.

  2. Place whole cauliflower in a pot with enough water to cover the bottom of the pan. Steam cauliflower on stove top or in microwave until soft but the head still holding together.

  3. Carefully remove the water from the pan.  Smear the entire cauliflower with the mayonnaise and then add cheese over the entire head. 

  4. Put cauliflower head in microwave or in oven for a few moments to melt cheese. On top, grate a little pepper and sprinkle salt to taste.

  5. Cauliflower is easy to cut with a spoon or fork and delicious as a side dish with fish or vegetarian main.
