Hot summer days just call out for easy meals and cool kitchens. Prepped and ready to eat in under 30 minutes is my kinds of meal for these hot South Carolina summer days. Wrap up the. Fajitas for your lunch box, picnic, lunch or light dinner at home. This is a great meal for a party, where your guests assemble the fajitas themselves and chose their own toppings. Teenagers would probably love this sort of meal with their friends. Include variations of toppings and ingredients according to your tastes. What a great meal. This is a great non-meat meal for those observing the nine days before Tisha  B’Av, the commemoration of the destruction of the Temple in Jerusalem, when non-meat meals are traditionally eaten.

In Michael Kirshtein's novel, The C. Shepherd, main character Chris Shepherd fights with his wits and not brute strength. He defends family and friends. He fights for justice for himself and others, although he understands that life is not fair.  Thus, he is a philosopher, viewing life as a narrow bridge and recording his thoughts in poetry and prose. Yet, his love of place, Sullivan's Island, of home is at the center. And with it comes his need to defend it, for those who live there and maintain a place of sanctuary and spirituality there.  Chris is a survivor.

Vegetarian Fajitas

Vegetables

2 tablespoons olive oil, more if needed

1/2 medium red onion, thinly sliced

2 bell peppers, colors of choice, thinly sliced

1 stalk celery, small chop

1 medium carrot, sliced into strips

6-8 ounces mushrooms of choice, sliced

1 1/2 teaspoons kosher salt

3 cloves garlic, minced
1-15 ounce can small red beans, drained and rinsed

 

Seasonings

2 teaspoons cumin

1 teaspoon chili powder

1 teaspoon smoked paprika

1/4 teaspoon black pepper

2 tablespoons white wine, optional

 

Small-medium tortillas

  1. Sauté onions until translucent. Add bell peppers, celery, carrot and mushrooms. Sauté until softened but not overly cooked. Add garlic and sauté one minute more.

  2. Add seasonings and mix with vegetables. Add wine and stir for another minute or two.

  3. Stir in beans. Taste and adjust seasoning.

  4. Warm tortillas.

  5. Add vegetables to tortillas. Add favorite toppings before rolling tortilla, such as a squeeze of lime, a dollop of sour cream, guacamole, salsa, shredded cheese or jalapeño peppers.  

  6. Leftovers store refrigerated for up to 3 days.

  7. As an alternative, serve without the tortilla and on top of rice.

 

Expandthetable suggestions

Add meat:  Add ground beef or turkey, when sautéing vegetables.
Vegetable protein:  Add cooked or canned chick peas, slightly mashed

Great leftover ideas:

  • Add to pasta, omelets, frittatas or Bubble and Squeak.

  • Add to French bread or a wrap for a great sandwich.

  • Add to pita and drizzle with humus and tahini.

  • Place on flatbread and quickly warm. Drizzle a bit of olive oil on top.

  • Place on top of a pizza crust with tomato sauce and cheese. Bake at 400 for 5-8 minutes or until the cheese is melted.

  • Add to fried rice for a quick Asian style meal.

  • Add to stock for a great soup.

  • Place in puff pastry and make Leftover Pockets.
