Homemade Pancakes made from a Squirt Bottle

Substitutions 

VEGAN: Omit egg. Use a nut, seed, coconut or soy milk. Use oil or a non-dairy margarine for butter.

GLUTEN FREE:  Use gluten free flour and oats

DAIRY FREE: Use a dairy free milk. Use oil or a dairy free margarine for butter.

SOY FREE: Use any milk other than soy.

DIABETIC:  Substitute Stevia for sugar following package directions. 

Yield 2 servings

 

1 cup Pancake and Waffle Mix

1 egg

¾ cup milk of choice 

1 tablespoon vegetable oil or melted butter

1 teaspoon vanilla

 

  1. Mix all ingredients together in a bowl.

  2. Make pancakes on a heated griddle or waffles in a preheated waffle iron.

  3. To freeze: Cook only until slightly golden. Cool and wrap in between parchment paper or waxed paper in container suitable for freezer.

 

Homemade Pancake and Waffle Mix

15 servings

 

5 cups all purpose flour

5 cups whole-wheat flour

1 cup yellow cornmeal

2 cups oatmeal

1 ½ cup sugar

½ cup plus 2 tablespoons baking powder

1½ tablespoons salt

3 tablespoons cinnamon

Optional add-ins:

1 cup bran

1 cup wheat germ

 

  1. Mix all ingredients thoroughly.

  2. Place in a tightly covered container and store in a cool dry place.

  3. See above for other ingredients to add when ready to make.
