When you think of British cuisine, who doesn’t think of Fish and Chips? Here’s a great version that is crunchy and flavorful. You may use any firm white fish—we use cod most frequently. The cucumber Dill Sauce is fabulous with it or try your favorite Tartar Sauce.

Fish and Chips
Serves 4
1 pound firm white fish, such as cod
1 egg plus 1 teaspoon water
1/2 cup instant potato flakes
2 baking potatoes, scrubbed and cut into thick slices
4 tablespoons olive or vegetable oil
1. Cut fish into 1 1/2” by 5” length pieces, approximately. Dip pieces in egg and then roll in instant potato flakes. This is a quick and lower calorie method of getting that crunchy texture usually from deep-frying. You may use finely ground bread crumbs instead.
2. Spray pan with oil or line with parchment paper. Place fish on tray. Drizzle with olive or vegetable oil. Bake at 350 F for 20-25 minutes or until the top of the fish is golden.
3. Cut potatoes into thick slices and brush with olive oil and salt. Leave unpeeled if desired. Bake at 450 on a parchment lined sheet until potatoes are cooked and crispy, about 25 minutes.
Cucumber Dill Sauce
This is a sauce that is great on almost any fish.
2 tablespoons onions, minced
½ medium cucumber, minced (peel if not organic)
1 teaspoon white horseradish
1 tablespoon fresh lemon juice
½ cup mayonnaise
1 tablespoon dill
Mix together. Lasts in refrigerator for 7-10 days.
Expandthetable suggestions
Fish in a Taco: Place 2 or 3 fish in the taco. Add coleslaw or salsa on top.
Fish Finger Sandwiches: Place fish between two slices of soft white bread, with Cucumber Dill or Tartar Sauce drilled on the fish first. Add lettuce or greens if desired.
Dairy Free: Use non-dairy instant potato flakes.
French Fries Alternative: For a great lower carb alternative, substitute rutabaga, sweet potatoes, parsnips or carrots.
