Warm weather is here-- picnics and BBQ’s are perfect for outdoor eating. Quintessentially American favs are hamburgers, hot dogs, corn on the cob, and Deli salads-Coleslaw, Potato Salad and Cucumber Salad. I had very dear friends visiting from Sweden and wanted to do an American night, after a wonderful day of sun and swimming. Fresh from the grill, the hamburgers, topped with grilled onions and coleslaw were happily accompanied by Charleston craft beer. I had an old picnic set that my kids loved with the military fork, knife and spoon all ready. Delicious was the pronouncement from all. We toasted our evening with Skål and L’Chaim!

Main character Paloma Leary is filled with grief after her mother dies. Her hold on reality seems to be tested when she then suffers 3 miscarriages, both losses merging. While Paloma is a bright, capable woman, her sorrow incapacitates her. At the same time, it allows her to explore the intuitive gifts she had tried to push away. But are these gifts or are these psychological issues? Written in a style known as magical realism, the author allows characters to live in the ordinary world while opening the plot to the extraordinary, the magical and the mysterious. And this is what occurs with Paloma.

Deli  Hamburgers

Makes 10-12 patties

 

1 pound ground beef

1 pound ground turkey

2 eggs, beaten 

1 small onion, grated or minced

1/4 cup ketchup

1 small carrot,  grated

1 teaspoon dried oregano or 3-4 fresh sprigs, about 2 tablespoons chopped

4 springs fresh parsley or 1 teaspoon dried parsley

1 teaspoon salt

1/2 teaspoon pepper 

1 cup finely ground breadcrumbs

 

For grilling

1 small onion

 

  1. Break up ground beef and turkey with a fork. Add eggs, onion and ketchup . Mix thoroughly. Add carrot, oregano, parsley, salt and pepper. Combine.

  2. Add breadcrumbs. When you press the mixture together in your hand, it should stay together. If too moist, add more breadcrumbs. If too dry, add a tablespoon of ketchup or water.

  3. Make into patties with your hands or with a hamburger press. You can put into the refrigerator at the point to grill later or immediately grill.

  4. I use a grill pan and add sliced onions when I grill hamburgers. Grill together or separately. Grill until the onions are slightly charred and the hamburgers are done to your preference. If you really love onions, use a large onion.

  5. Serve on a bun with Russian Dressing, coleslaw and the grilled onions on top. A big sour or dill pickle on the side makes it a real deli treat!

  6. Serve with Deli Potato Salad and Cucumber Salad on the side.

Grilling:  Add mushrooms, pastrami or bacon to the grill and add to burgers.

Gluten Free: Use gluten free bread crumbs and roll.

Vegan: Replace the hamburger with a Veggie or Beanie Burger.
