I am not a great avocado fan. There, I’ve said it. But staying at a fine hotel recently, their avocado toast with a poached egg on top looked inviting. I hesitatingly ordered it and what a fabulous breakfast it turned out to be! I have recreated it here—simple, healthy, filling and delish! Make a festive breakfast, a light lunch, which I had today, or a breakfast for dinner that so many of us enjoy. This is a great recipe for kids or friends to help with. Set up an assembly line--goes faster and brings folks together!

Four teenage girls confront hatred, corruptness, violence and death. Each girl exists within her identities. Caroline and her younger sister Dotty are white and Christian. Pearlie is black and Christian. And Anne Frank, a Jewish teenager during her years in hiding and in concentration camps, hovers at the edge, influencing the girls and the reader. Mr. Rabinowitz, Holocaust survivor and owner of "The Jew Store," the town’s conscience, is a support for the girls in this small Texas town in the 1950's.

All of the characters of Colors of Truth have seen or experienced hate and violence. Paula Paul’s depiction is well written with a depth and elegance of writing that draws the reader in with a surprising conclusion.

Avocado Toast

Serves 1

 

1 avocado

Squeeze of fresh lemon

1 teaspoon red onion, minced.

1 tablespoon cucumber, minced. Cut 2-3 thin slices for garnish.

1 radish, minced. Cut 2-3 thin slices for garnish.

1/4 teaspoon salt

A few turns of a pepper grinder.

1 egg, poached

1 piece of toast, buttered, for each egg

 

  1. Peel avocado and mash until almost smooth, leaving some texture.

  2. Add red onion, cucumber and radish. Combine. Squeeze one slice lemon over the avocado mixture and mix. Salt and pepper the mixture. Set aside. Thinly cut 2-3 slices of the radish and cucumber for garnish.

  3. Toast bread of choice—a crusty or whole grain is great here. I used rye bread. Butter it. Scoop avocado mixture onto toast.

  4. Poach 1 egg. Gently remove and place on top of avocado mixture. Atractively add slices of cucumber and radish.

  5. Break egg and enjoy!

  6. Make as many as you like, multiplying the recipe.

Dairy free: Use a non-dairy margarine for the toast.

Save time: Use a pre-made avocado mash
