In this gift giving season, one of the best gifts we can give our children is reading to them in their childhood. Even after they grow old enough to read for themselves, the act of reading out loud is magical and should be continued. A mother of a 3-year-old once asked me when she should start reading to her young son. I gasped, I’m afraid. I had started reading to my daughter when she was a few weeks old, and her younger brother joined us when we came home from the hospital the day after his birth! Here are a few young children’s books to read aloud, to read together. Read at bedtime, read during the day with a child on your lap, read with a child next to you on the floor. With reading and math scores plummeting across the country, reading to your children, grandchildren or any children in your life, will give them three things that will help them in their lives: love of reading, love of adventure and love of a beloved family member who took the time to read to a cherished child.

Korean Beef and Broccoli

Serves 4


Beef

1 pound beef strips, such as for fajitas or stir fry

Sauce

1 tablespoon corn or potato starch

1 tablespoon water

1/4 cup soy sauce

2 teaspoons sugar

1 tablespoon toasted sesame oil

Stir-fry:

1 broccoli head, cut into florets

3 teaspoons vegetable oil, divided

1 tablespoon minced fresh ginger

2 cloves garlic, finely chopped

1 teaspoon red pepper flakes, optional

1 tablespoon hoisin sauce

1 teaspoon toasted sesame seeds

2 scallions, thinly sliced

Steamed white rice or brown rice, for serving

 

  1. Cut beef into thin strips. Place in a bowl.

  2. Mix cornstarch and water together until dissolved. Add soy sauce, sugar and sesame oil. Add 2 tablespoons to beef and toss to coat the meat; reserve.

  3. Add 1 cup water to the wok and bring to a boil over medium-high heat. Add broccoli, cover and steam until fork tender.  Remove broccoli from wok and reserve.  

  4. Heat wok until dry.  Add 1 teaspoon oil, then small batches of beef. Stir until beef is slightly browned, about 1 minute. Add more oil is necessary. Remove to a plate and then repeat with remaining beef.

  5. Drizzle another teaspoon of oil into wok. Add ginger and garlic and stir fry about 30 seconds. Add broccoli, beef and any accumulated juices. Stir to combine. Whisk the remaining sauce then add to beef-broccoli mixture. Stir sauce is thickened, 2-3 minutes.

  6. Add hoisin sauce and stir to cover beef and broccoli.

  7. Plate attractively, sprinkle with sesame seeds and garnish with scallions. Serve over rice.

 

Expandthetable suggestions

Exchange the beef: Use boneless chicken breasts, sliced thinly or cubed tofu

Add vegetables: Use thinly sliced zucchini, eggplant, carrots, peeled sweet potatoes or other favorite veggies.

A bit salty, savory and sweet, this Korean stir fry is a perfect contrast of beef and broccoli in a very flavorful sauce. The simple ingredients come together quickly and easily. Marinate the beef and stir fry on a high heat and quickly steam the broccoli. This stir fry is perfect as a weeknight dinner or for a special evening.  If you like, add some heat, other veggies or rice noodles. For a full Asia-fusion spread, add some fabulous sides:  Kimchi, Bok Choy Salad, Cucumber or Spinach Salads.
