Key Lime Pie Minis

The creamy tangy sweet filling is a perfect match for the crumbly, crunchy graham crackers. Usually you see this dessert as a full pie, but we like to prepare these in individual portions, which makes a gorgeous presentation.

 

This no bake version is a great dessert for the hot summer months when you don’t want to stay in a hot kitchen! A cool smooth, scrumptious taste is enhanced by the sweet grahams crackers crumble crust and topping. The small individual portions make serving easy.

Key Lime Pie Minis

Yield 10-12 cups

 

Filling

1 pound cream cheese, softened

2 14-ounce cans sweetened condensed milk

¾ cup key lime juice, about 5 limes

 

Graham Cracker Crumble

2 cups graham cracker crumbs

¼ cup sugar

2 tablespoons butter, melted

1/8 teaspoon salt

Lime slices, optional garnish

  1. To make the filling, whip cream cheese and condensed milk together in a mixer until smooth.

  2. Gradually add lime juice, mix well and refrigerate for 1-2 hours before serving.

  3. Mix crumble ingredients together in a bowl and set aside.

  4. Scoop 2-3 tablespoons of crumbs into each cup, shake gently to level, and top with ¼ cup key lime filling. Sprinkle with another tablespoon of crumbs on the top.

  5. Garnish with lime slices.

Gluten Free:  Substitute gluten free graham crackers crumbled into small pieces for graham cracker crumbs.
Dairy Free: Use a dairy free cream cheese. Substitute 2-14 ounce cans of coconut milk, full fat mixed with 1 ½ cup powdered sugar. Substitute dairy free margarine for butter in crumble.

Lower the Sugar: Use Stevia in place of sugar in the crumble

Whole Pie: To make a whole pie, pour filling into a homemade or store-bought graham cracker pie shell. May pipe whipped cream on top of pie.

Evaporated Milk: Use 2 1/4 cup in place of the 2 cans of sweetened condensed milk with 1/2 cup plus 1 tablespoon sugar. Heat over medium heat, stirring until sugar is dissolved. Cool and proceed with recipe.
