Years ago, side dishes were often made to soak up the gravy of the main course and were regularly potatoes and rice. While potatoes and rice are still favorites, a wide variety of fresh vegetables have been added to most meals.  From healthy to hearty, the sides are fabulous, some enough to be a light meal. Versatile, elegant, traditional and a bit unusual.
