Royal Dell's Cole Slaw

 

Serves 12 (6

“Soup”

2 cups (1) sugar

1 cup (1/2) cup hot water

4 (2) teaspoons kosher salt

¼ cup (2 tablespoons) apple cider vinegar

1 teaspoon (1/2 ) pepper

1 teaspoon (1/2) celery salt

2 (1) cloves garlic, minced

2 cups (1) mayonnaise

Vegetables

1 (1/2) large cabbage, small chop

½ cup (3 tablespoons) onions, minced or grated

2 (1) green or red pepper, finely sliced

2 (1) carrot, finely sliced or grated

 

Directions

  1. "Soup":  Mix sugar and hot water together, stirring to dissolve.  Add salt, vinegar, pepper, celery salt and garlic. Stir. Add mayonnaise. Mix together until lumpy. My Dad called this liquid the "soup."

  2. Add onions, cabbage, peppers and carrots.

  3. Let stand for 3 hours or overnight in refrigerator before serving.

  4. Note: Cole Slaw and Potato-Cauliflower Salad (link below) recipes are vegan with vegan mayonnaise.

As a Deli-man’s daughter, I grew up on deli salads: Cole Slaw, Potato Salad, Cucumber Salad, Health Salad, Macaroni Salad. Pair Cole Slaw with a Corned Beef-Pastrami combo on Rye Bread and it was heaven. I haven’t tasted many deli salads as good as my Dad’s. When I would visit his deli, The Royal Dell in New Jersey, my mouth began watering, whether for a sour pickle from the wooden barrels, a deli meat sandwich or for any of his fresh, crisp deli salads. When my Dad gave me his recipes, he had to reduce the amounts down from the 50 pounds batches of each he made daily. Easy to make and delicious not only with deli sandwiches but any grilled meat, poultry, fish or veggies. Almost any menu!  Can you tell I love these salads!!You’ll want to keep the recipe on hand as the weather warms and picnics and BBQ’s are on the schedule.
