Olive Oil Snickerdoodles

In this gift giving season, one of the best gifts we give our children is reading to them. Even after they grow old enough to read themselves, the act of reading out loud is magical and should be continued. A mother of a 3-year-old once asked me when she should start reading to her young son. I gasped, I’m afraid. I started reading to my daughter when she was a few weeks old. Her younger brother joined us the day after his birth!
Here are a few young children’s books to read aloud, to read together. Read at bedtime, read during the day with a child on your lap, read with a child next to you on the floor. With reading and math scores plummeting across the country, reading to your children, grandchildren or any children in your life, will give them three things in their lives: love of reading, love of adventure and love of a beloved family member who took the time to read to a cherished child.
Olive Oil Snickerdoodles
Yield: 2 dozen
Sugar Spice topping
1/4 cup (50g) white sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon cardamom
1/2 teaspoon ground cloves
Dry ingredients
1 cup (200g) white sugar
2 cup (250g) flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
Wet ingredients
1/2 cup (118ml) olive oil
1/4 cup (59ml) pure maple syrup
3 tablespoon milk of choice
2 teaspoon vanilla extract
Glaze
1/4 cup confectioner’s sugar
2-3 teaspoons water ot milk of choice

Preheat oven to 350°F (180°C). Line 2 large baking sheets with parchment paper.

Mix the topping ingredients together into a small bowl. Set aside.

Into a measuring cup, mix together oil, maple syrup, milk and vanilla. Mix for a minute.

Into a medium size bowl, add flour, baking soda, salt and cinnamon. Wisk together. Add liquid mixture. Thoroughly mix until you have a dough that comes together.

Roll dough into walnut sized balls. Dip balls of cookie dough into the topping mixture and with your hands slightly flatten into discs.

Place each cookie onto a parchment lined baking sheet, topping side up, about 2” (5cm) apart.

Bake for 10-12 minutes, until the cookies are browned a little bit on the bottom.

Remove from oven, transfer to a cooling rack to cool to room temperature.

Mix confectioner’s sugar with water or milk until the sugar is totally dissolved. The consistency should be thin enough to drizzle on each cookie for an extra sweetness!

To freeze, cool completely. Place back on baking sheet with the parchment paper and place in freezer. Freeze for about 30 minutes and then remove and put into a zip lock freezer bag. Freeze for up to 3 months.
