Orange Chocolate Silan Biscotti

Add a touch of Israel with this Silan sweetener. Silan is date honey, the honey mentioned in the Bible. Rich, dark and sweet, it adds a wonderful flavor to the nutty flavor of the almond flour and ground walnuts I used. This recipe does not use wheat flour making it gluten free and kosher for Passover. And need I add, delicious! You can add and subtract the mix ins to your heart’s desire, from chocolate chips, dried fruit, extract flavorings to nuts.
Orange Chocolate Silan Biscotti
Yield: 2 logs, approximately 10-12 slices
Dry Ingredients
1 cup packed almond flour
1 cup cassava flour
1 cup ground walnuts or other nuts such as almonds or pecans
3 tablespoons potato starch
3 teaspoons baking powder
1/8 teaspoon salt
Wet Ingredients
3 eggs
1/2 cup silan (date honey) or honey
3 tablespoons freshly squeezed orange juice
3 tablespoons orange zest
Chocolate and Nuts
1/2 cup semi-sweet chocolate chips
1/2 cup sliced almonds
Chocolate Glaze
1/2 cup chocolate chips or bars, melted
1. Preheat oven to 350 degrees F.
2. Mix dry ingredients together in a bowl. Then add wet ingredients and mix until a dough forms.
3. Add chocolate chips and almonds and mix together.
4. Wet hands and form two equal logs, measuring about 10” x 2” on and place on a parchment lined baking sheet.
5. Bake for about 20 minutes, until firm to the touch. Let cool on the counter for 1 hour.
6. Reduce oven temperature to 250 F. Slice cooled biscotti ogs into 1/2” diagonal slices. Spread individually on a baking sheet lined with parchment paper.
7. Bake for 10-12 minutes on each side. Let cool completely.
8. Melt chocolate and drizzle pipe over cooled biscotti.
Expandthetable suggestions
Lessen the sugar: Substitute stevia for honey, following package instructions for equivalent measurements.
Chocolate haters! Replace chocolate with dried fruit such as dried cranberries, apricots, cherries, all rough chopped
Flavorings: Add 1 t4easpon vanilla, almond or anise extract
White Chocolate: For a light appearance, drizzle white chocolate over the biscotti or mix the dark and white chocolate for a great contrast and delicious flavor.
Nutfree: Omit nuts. Substitute toasted pinenuts if desired..
