Apple-Carrot Kugel

Sweet, light and flour free. This Apple-Carrot Kugel is perfect for Passover meals or an Easter morning brunch.  Try it for breakfast or with brunch, a side for lunch or dinner or for a light dessert. Golden top, light apple taste—veggie haters will never even know the kugel has any carrots!! You can add chopped nuts or golden raisins.  And, of course, you can lessen the sugar with Stevia, as I do.  Tastes great either way.

Apple Carrot Kugel

Serves 6

 

1/4 cup apples, peeled and shredded

1 cup packed grated carrots

4 eggs, separated

1/2 cup sugar or 1/4 cup stevia

1/4 cup sweet wine or apple juice/sauce

2 tablespoons lemon rind

1/3 cup potato starch

 

  1. Preheat oven to 375.

  2. Beat egg yolks and sugar until light. Add grated carrots, apples, wine, lemon juice and rind and potato starch.  Blend well.

  3. In a separate bowl, beat egg whites until stiff.  Fold into carrot-apple mixture.

  4. Spray casserole dish or baking pan with vegetable oil. Turn into greased casserole dish. Bake for 35 minutes or until puffed and set.

Expandthetable suggestions:

Less sugar:  Use 1/4 cup stevia in place of sugar

Nuttier:  Add 1/4 cup chopped walnuts or pecans

Raisins:  Add 1/4 cup golden raisins
