Maple Brussels Sprouts

This recipe is all about the texture you get from roasting Brussels Sprouts. The flavor of the caramelized onions with the sweet maple syrup and cranberries works perfectly in rounding out the slight bitter green. Add the leaves that have become loose--they will get extra crispy as they roast. Roasting gets rid of the smell and bitter taste often negatively associated with Brussels sprouts, turning them sweet, tender, and delicious — especially when you toss them with maple syrup before roasting. These are gorgeously caramelized baked Brussels sprouts with crunchy leaves on the outside, and buttery soft and tender on the inside. Give them a try!

Maple Glazed Brussels Sprouts

Serves 6

 

1 pound Brussels Sprouts, trimmed and quartered

½ red onion, small dice

1/2 cup dried cranberries

2 tablespoons olive oil

1/4 cup maple syrup

1 teaspoon salt  

1/4 teaspoon pepper

 

  1. Preheat oven to 400 F. Line a sheet tray with parchment paper.

  2. Add Brussels Sprouts, red onion, cranberries, olive oil, maple syrup, salt and pepper to the tray. Toss until combined.

  3. Roast for 20-25 minutes or until golden and crisp and fork tender. Taste and adjust seasoning.
     

Expandthetable suggestions

Allium Free:  Substitute ½ fennel bulb, small dice, for onion.

Diabetic: Use sugar free maple syrup

Bring all the hostages home.
