Lasagna Roll Ups
Spread cheese filling on each noodle.
Roll up the noodles.
Place tomato sauce and cheese on top.
Bake in 350 oven.
Read to serve and eat!
Rather than laying the noodles horizontally, this lasagna is made by placing the filling inside, rolling up the noodle and adding the tomato sauce and cheese on top. A different look but the same great taste!
Add meat, additional vegetables or your favorite spices. Use this concept of rolling each noodle and make these lasagna roll ups your own!
8 ounces ricotta or cottage cheese
1 16-ounce frozen spinach, frozen drained or 1 pound fresh, rinsed
8 ounces-1 cup mozzarella, shredded
4 ounces-1/4 cup Parmesan, grated
6 ounces spaghetti sauce
1 teaspoon oregano
1 teaspoon garlic
Preheat oven o 350.
Boil lasagna noodles until soft. Rinse and drain.
Spread spaghetti sauce on bottom of a 8X8 or 9X9 pan.
Spread a tablespoon of the ricotta mix on the noodle. Roll lasagna noodle, placing seam side on bottom. Continue with rest of lasagna noodles until pan is filled.
Next spread a thin layer of spaghetti sauce, and finally sprinkle mozzarella cheese on top of roll up noodles.
Top with spaghetti sauce mix and sprinkle mozzarella and then Parmesan cheeses on top.
Bake 30 minutes.
Serve or freeze for future use.
