Lemon Pepper Mock Tuna Salad:

Frugal, budget friendly, healthy. Plant base eating at its finest. 

 

What an easy way for people to make a mock version of tuna salad! We just substituted mashed chickpeas (you can also use white beans) for the canned tuna. The rest of the ingredients are just mayo, mustard, sweet relish if you like, salt and pepper. We added lemon zest and juice and it gave it a nice flavor. Ours is completely vegan.

Add whole wheat bread, some sprouts and what a great sandwich!
