Lemon Pepper Mock Tuna Salad
1 can chickpeas, drained and mashed
1/4 cup raw vegan sour cream or mayonnaise
2 stalks finely chopped celery
1 tablespoon Dijon mustard
1 teaspoon lemon zest
Pinch of sugar, optional
4 ounces firm tofu
Indian Chaat Masala spice
Mix together chickpeas, sour cream or mayonnaise, celery, mustard, sugar and lemon zest.
Take tofu and 1 teaspoon Chaat masala and mash with fork.
Add a few grinds of fresh pepper and if you choose, 1/2 teaspoon sugar.
Toast whole grain bread, place sprouts on the bread as a base, add the “tuna” salad, one or two slices of tomato, a few grinds of pepper, and the top piece of bread. A fabulous sandwich!
Option: Add 1 hard boiled egg in place of tofu and Chaat Masala, a spice found in Indian stores.
