AS a retired teacher and principal, I can tell you that healthy snacks are better for brainpower than fried or sugary munchies. And making them yourself is better for the budget! Many of these can be frozen and picked up before the end of the school day. Your kids don’t want to eat breakfast? Grab a few for your kids’ backpacks and they can munch on the way to school or in a snack break that most schools allow. Boiled Peanuts, Southern Style

Want to bring back nostalgia from your childhood snacks? For many in the South, Boiled Peanuts do the trick! Sold in stores, hawked on the street and served in restaurants, this simple, healthy and traditional Southern snack brings back a lot of memories for Southerners. Never having tasted them before I moved to the South, I was hesitant the first time I saw these peanuts in salty water. My first taste was not a hit. But after a few boiled peanuts, I was won over! A Southern friend told me I had to make them for this blog. Easy to make, I sat down to munch while I was scrolling through my email. When I looked down to get the next one, they were all gone!! Such a good snack, easy to take along to the beach, pool, picnics or BBQ’s, be sure to pick up a bag to make your own. While the South claims these snacks as their own, including South Carolina where it is the State’s official snack, boiled peanuts are sold in much of the world, with different ingredients added to the boil. Some recipes are spicy, some add meat or fish, but the traditional boil with salt is still the favorite in the South.

Boiled Green Peanuts, Southern Style

1 pound raw green peanuts, in shells
4 cups water or to cover
1/4 cup kosher salt
1 teaspoon cayenne pepper, more if desired
2 teaspoons garlic powder
1 teaspoon turmeric

Rinse peanuts in a colander 3 times, removing dirt or dust and discarding any that look damaged.

Place in large and heavy pot. Pour in water to cover. Cover with a lid and bring to a boil.

Simmer for 1 1/2-2 hours or until tender. Check every hour to make sure there is enough water in the pot. Add water warm from the tap if you need to add water.

When the peanuts are soft enough for your preference, taste and adjust seasoning. Add more salt, if necessary or if too salty, remove some of the water and add fresh water.

Let peanuts cool in pot for 20 minutes.

Rinse and drain.

Keeps in the refrigerator for up to one week or in freezer for up to 3 months.
