Israeli Couscous in a Kale Salad

Grain salads are filling enough to be a meal and this Israeli Couscous in a Kale Sale is not exception! Hearty, seasoned with Middle Eastern spices, and with cherry tomatoes and seedless cucumber, developed in Israel. This salad will last several days in the refrigerator, making it perfect for prepping ahead of time for company or for making several meals for yourself. The bright flavors are matched by the bright colors, making it an attractive fall salad for your table.

Israeli Couscous in a Kale Salad

Serves 4 as a side, 2 as the main course
6 ounces kale, (2 cups) stems removed and leaves chopped
3 tablespoons lemon juice
1 cup vegetable or vegan stock
½ cup onion, chopped
2 garlic cloves, minced
½ teaspoon curry powder
¼ teaspoon ground cumin
¼ teaspoon sweet or mild paprika
1 cup multicolored Israeli couscous
10 cherry tomatoes, halved
1/2 red bell pepper, cored, seeded, and chopped
1/2 cup cucumber, sliced
2-3 scallions, green stems chopped
1/4 cup finely chopped fresh parsley
3 tablespoons finely chopped fresh basil
2 tablespoons cranberries
Kosher salt and freshly ground black pepper, to taste

Place kale and lemon juice in a bowl. Massage kale leaves and let sit.

In a pan, sauté onion and garlic, until onion is translucent. Stir in curry powder, cumin, and paprika. Add stock and bring to a boil. Add couscous. Simmer uncovered for 10 minutes or until the liquid has been absorbed and the couscous is al dente. Add more water if needed. Transfer couscous to a bowl and bring to room temperature.

Mix together the kale, tomato, bell pepper, cucumber, scallions, parsley, basil, and cranberries. Toss in couscous. Add salt and pepper to taste.

Chill in refrigerator until ready to serve.
