Thanksgiving Leftovers Pockets

What to do with so many Thanksgiving leftovers? Tuck them into pastry pockets for a new look. Fill them with diced turkey or other meat, chopped vegetables, rice, mashed potatoes or cauliflower. Then add a teaspoon of gravy or cranberry sauce for moisture and flavor. Brush with a beaten egg for a beautiful finish.

 

Bake the pockets golden brown for a delicious meal. Great for Thanksgiving leftovers and leftovers any time of the year. The pockets make a tasty meal or appetizer. You may be looking forward to having leftovers from now on!

Thanksgiving Leftovers Pockets

Yield 18 triangles

1 package puff pastry, 2 sheets, cut into 9 squares on each sheet

Thanksgiving leftovers:

            Turkey or other poultry or meats, diced

            Rice Pilaf

            Cooked vegetables, diced

            Mashed Potatoes or Cauliflower Mash

            Cranberry Sauce

            Other leftovers

Gravy

1 egg, beaten, for egg wash

 

  1. Preheat oven to 400F.

  2. Roll out each pastry sheet on parchment papers to desired thinness. With a sharp knife or pizza cutter, cut each sheet into 9 squares. Place 1 teaspoon leftovers in the middle of each pastry square. For poultry, add 1 teaspoon gravy or cranberry sauce or both. For mashed potatoes, cauliflower mash or pilaf, add 1 teaspoon gravy. You may combine some of the leftovers, such as turkey, pilaf or vegetables, as desired.

  3. Fold the square into a triangle. Using a fork, press edges together. Brush tops with egg wash.

  4. Place triangles on parchment lined baking sheets. Put into oven on a middle shelf for 15 minutes or until tops are golden. Remove from oven and cool. Serve immediately.
     

Expandthetable suggestions

For larger servings: Place 1 heaping tablespoon on a square and place another square on top. Proceed as in above directions. Yield will be 9 squares.
