Kale-Apple-Red Cabbage Salad

This bright and crispy Kale-Red Cabbage-Apple Salad is perfect for holiday dinners. You can easily make it the day befor-- its red and green colors remain bright for a beautiful presentation. I particularly like the sweet flavors of the apple and the crunchy toasted almonds with the slightly tart flavor the kale and red cabbage bring. The kale and red cabbage keep their crunch, unlike salads that wilt last only after a few hours. Leftovers make a wonderful light meal.
Kale-Red Cabbage-Apple Salad

Serves 6-8 as a side
Vegetables
1 crisp tart apple, thinly sliced and chopped into match stick size
2 tablespoons lemon juice
6 cups chopped curly kale, thick stems removed
2 cups shredded red cabbage
1 large carrot, shredded
1/4 cup sliced, toasted almonds or pecans
Vinaigrette
2 tablespoons apple cider vinegar
1 1/2 tablespoons maple syrup
1 tablespoon Dijon mustard
1/2 teaspoon kosher salt
2 tablespoons olive oil

Dip the apple slices into the lemon juice.

Mix the vegetables together and add the apples.

In a medium bowl, whisk together the apple cider, mustard and salt. Add the olive oil and whisk until the dressing begins to thicken a bit.

Pour the dressing over the vegetables and toss to combine, making sure all the kale is coasted with the dressing.

Add the toasted almonds just before serving. The salad stores for up to 4 days in the refrigerator.

In this gift giving season, one of the best gifts we can give our children is reading to them in their childhood.
