Savory Crêpes can be served for breakfast, lunch or dinner. They can be a quick meal for one or two or a great supper with guests. You can fill them pretty much with any cooked vegetable and herbs. Cheese is often melted inside, before folding the crêpe.  The filling I used in this crêpe has caramelized onions, sautéed mushrooms, fresh spinach and garlic. I used fresh chives and basil from my herb garden. I couldn’t resist listing several variations in the expandthetable suggestions.

While Savory Crêpes seem very sophisticated, they are actually quite simple to make. To prep ahead, store the crêpes in the refrigerator or freeze them, with parchment paper between each layer. Warm the crêpes in a skillet before filling. They make a very special breakfast or brunch for company. Family or guests may even fill their own crêpes with a variety of fillings prepared before.

Savory Crêpes

Serves 4

Filling

1 small onion, chopped

1 cup mushrooms, sliced (about 8)

2 cloves garlic, minced

2 cups spinach leaves, chopped

2 tablespoons Cognac

2 teaspoons chives, minced

1 teaspoon fresh basil, chopped

1 teaspoon fresh thyme leaves, chopped

1 cup Emmental or cheese of choice, grated

Crèpes

4 eggs

1 1/2 cups of milk of choice

1/4 cup buckwheat flour

3/4 cup all-purpose flour

1/4 teaspoon salt

3 tablespoons butter or margarine

 

Filling

  1. Sauté the onions until golden. Add garlic, cherry tomatoes, mushrooms and spinach.

  2. Sauté until spinach is wilted.

  3. Add fresh basil, paprika, salt and pepper. Stir. Set aside.

Crèpes

  1. Beat eggs and milk together.

  2. Mix flours and salt together. Add to egg-milk mixture. Mix until combined. Refrigerate for 1 hour or more.

  3. Pour 1/4 cup of the batter into a pre-heated 8” pan. Cook about 2 minutes and flip. Cook another 2 minutes until golden.

  4. Stack on a plate until ready to use.  When ready to use, place in an oven that is heated to 200F.

Assembly

  1. Place 2 tablespoons of the filling on one side of the crèpe. Add 2 tablespoons cheese. Place in the oven until the cheese melts.

  2. Remove from oven and fold the crèpe. Repeat until you have filled all the crèpes.

  3. Serve.
