Susan's New York Cheesecake

Cheesecake with chocolate crust and gana

New York Cheesecake is thick, rich and decadent. I make this twice a year: once for my husband’s birthday and once for Shavuot, when it is traditional to eat dairy. It’s a fabulous dessert for the summer when you serve it cold and creamy.

 

If you are a chocoholic like me, add the chocolate crust and Chocolate Ganache on top and you have an unforgettable dessert.

Recipe is below.

Susan's New York Cheesecake


CRUST:

18 graham crackers

2 tablespoons sugar

2 tablespoons butter

CAKE:

3 8-oz. packages cream cheese, room temperature

5 eggs

1 cup sugar

1 teaspoon vanilla

Chocolate Ganache

1/2 cup heavy cream

4 ounces semi sweet chocolate
 

Crust

  1. Crush graham crackers. 
Melt butter.


  2. Mix ingredients together and spread on bottom and sides of 8x11-inch

  3. baking pan. 
Put in refrigerator.

Cake

  1. Mash the softened cream cheese in a bowl.
Add eggs into bowl, one at a time,

  2. mixing well after each egg.


  3. Add sugar and vanilla into bowl.
Pour the cheese mixture onto the crust.


  4. Bake at 375-degrees in springform pan for 40 minutes.

Chocolate Ganache

  1. Bring 1/2 cup heavy cream to a boil over 4 ounces of semi sweet chocolate. Cool but still in liquid state before spreading on top of cake.

  2. Unmold cheesecake. Spread ganache in center of cheesecake; let set before serving.

Make a Chocolate Crust: Use 18 Chocolate Graham Cracker in place of regular graham crackers crust.
