The pretty and tasty radicchio balanced by the sugared almonds is always a favorite with family and guests. It is one of my favorite salads for company or a special treat yourself salad. In these difficult times, a superb salad is just the thing we all need! If you can’t find raspberry vinegar, use any white vinegar and add 2 tablespoon raspberry jam, minus the sugar. So good—it’s been a favorite at our house for many years.

“All right, Bad Love Crew, we are headed to Kortenberg for a rendezvous with the destiny of time travel.” Thus was the beginning of the mission of this talented, boisterous gang to rescue victims of the Holocaust.

 

There is much that we must suspend disbelief for in Bad Love Strikes. There is of course time travel. Yet more than that is the age of the main characters—teenagers. These teenagers develop a plot to outwit the Nazis; to fly military planes; already have historical knowledge of WWII and the Holocaust; have the skills to play roles far beyond most teenagers’ skills. Yet I found myself rooting for them to succeed.

Mandarin Orange Salad with Raspberry Vinaigrette Dressing

Serves 4-6

 

 

Sugared Almonds

1 cup slivered almonds

2 tablespoons sugar

Raspberry Vinaigrette

¼ cup sugar

¼ cup raspberry vinegar

2 tablespoon fresh parsley, finely chopped

1 teaspoon salt

Dash black pepper

Dash cayenne

Dash Tabasco sauce

½ cup olive oil

Salad

1 small head Boston Bibb or Butter Lettuce, torn into bite size pieces

½ small head of radicchio, torn into bite size pieces, optional

1 small head romaine lettuce, torn into bite size pieces

1 celery stalks, small dice

2 green onions, thinly sliced

1-11oz. can mandarin oranges, drained

Sugared Almonds

  1. Stir sugar constantly in saucepan over low flame until sugar melts.

  2. Add almonds. Cool and break apart.

Raspberry Vinaigrette

  1. Mix first 7 ingredients in dressing together.

  2. Add olive oil slowly, beating with a whisk or fork until the vinaigrette thickens.

Salad

  1. Toss lettuces, celery, onions, mandarin oranges and almonds together with vinaigrette.

  2. Serve and enjoy.

 

Expandthetable suggestions

Allium Free: Substitute 1/2 red bell pepper, diced, for the green onion.

Diabetic: Substitute 1 tablespoon brown sugar Stevia when toasting and sugaring the almonds and 1 tablespoon stevia for sugar in dressing. Use Mandarin Oranges with natural juices only.
