Mandarin Orange Salad with Raspberry Vinaigrette Dressing expandthetable.net
1 cup slivered almonds
2 tablespoons sugar
¼ cup sugar
¼ cup raspberry vinegar
2 tablespoon fresh parsley, finely chopped
1 teaspoon salt
Dash black pepper
Dash Tabasco sauce
½ cup olive oil
1 small head Boston Bibb or Butter Lettuce, torn into bite size pieces
½ small head of radicchio, torn into bite size pieces, optional
1 small head romaine lettuce, torn into bite size pieces
1 celery stalks, small dice
2 green onions, thinly sliced
1-11oz. can mandarin oranges, drained
Stir sugar constantly in saucepan over low flame until sugar melts.
Add almonds. Cool and break apart.
Mix first 7 ingredients together.
Add olive oil slowly, beating with a whisk or fork until the vinaigrette thickens.
Toss lettuces, celery, onions, mandarin oranges and almonds together with vinaigrette.
Serve and enjoy.
Allium Free: Substitute 1/2 red bell pepper, diced, for the green onion.
Diabetic: Substitute 1 tablespoon brown sugar Stevia when toasting and sugaring the almonds and 1 tablespoon stevia for sugar in dressing. Use Mandarin Oranges with natural juices only.
