Apple Carrot Kugel
1/4 cup apples, peeled and shredded
1 cup packed grated carrots
4 eggs, separated
1/2 cup sugar or 1/4 cup stevia
1/4 cup sweet wine or apple juice/sauce
2 tablespoons lemon rind
1/3 cup potato starch
Preheat oven to 375.
Beat egg yolks and sugar until light. Add grated carrots, apples, wine, lemon juice and rind and potato starch. Blend well.
In a separate bowl, beat egg whites until stiff. Fold into carrot-apple mixture.
Spray casserole dish or baking pan with vegetable oil. Turn into greased casserole dish. Bake for 35 minutes or until puffed and set.
Less sugar: Use 1/4 cup stevia in place of sugar.
Nuttier: Add 1/4 cup chopped walnuts or pecans.
Raisins: Add 1/4 cup golden raisins.
